The chef alleges that the athlete became angry and slapped her across the face before attempting to choke her with the crook of his elbow.
The complainant told officers she struggled to breathe during the encounter and feared she might lose consciousness.
She also claimed Stefon Diggs threw her onto a bed before leaving the room.
The woman stated she had not received her monthly salary and disputed a week in November where the player allegedly refused to pay her because he did not need her services.
On Tuesday, authorities officially charged Stefon Diggs with felony strangulation or suffocation and misdemeanor assault and battery.
Attorney David Meier, representing Stefon Diggs, released a statement strongly denying the claims. He described the allegations as "unsubstantiated" and "uncorroborated," suggesting that they did not happen.
The legal team argues that the former employee fabricated the story because of an unresolved financial disagreement.
The attorney noted that Stefon Diggs looks forward to proving his innocence in a court of law.
The chef told investigators she initially hesitated to come forward because of the player's high profile in the NFL.
She also provided text messages that reportedly document the tense exchange regarding her pay.
Additionally, the woman claims she received messages from an individual she believes is the player's girlfriend, urging her not to pursue the matter.
